 Best Fluffy Vegan Blueberry Muffin!

Ingredients

1  ½  cups mashed ripe bananas ( about 3 medium bananas)

1/3 cup vegetable oil ( I used Avacodo oil)

1 tsp baking power

1 tsp baking soda

1 tsp vanilla

1 tsp cinnamon

1 cup Chickpea flour

1 cup fresh or frozen blueberries

½ cup chopped walnuts 

Method

Step 1

Preheat oven to 375 degrees, and lightly grease a muffin tin

 

Step 2

Place the mashed bananas in a large bowl.

 

Step 3

Add, oil, vanilla, baking powder, baking soda, cinnamon, and flour and gently mix together until well combined

 

Step 4

Fold the blueberries and walnuts into the batter.

 

Step 5

Spoon the batter into the muffin tin, filling each cup to the top.

 

Step 6

Bake for 25 minutes or until the muffins are golden brown
